As with most males, my husband understands love best when it's offered through food. And he has a royal sweet tooth!
A few years ago, I came across this recipe for Peanut Butter Sandwich Cookies in a Taste of Home book that I've used and abused. Typically, he's not a peanut butter fan, but he seemed eager for me to bake these, so I went for it. And the response was completely worth it! Since then, they've become a go-to special treat. And this week has been a crazy week in our house. Lots of overtime, lots of stuff going on, lots of time not getting spent together. Just one of those weeks in a law enforcement family. So I made these cookies, just as a little "I love you" for him. Totally worth it...it always is =)

Being part of a law enforcement family means being wholly committed to someone who is wholly committed to his work. It is not a life that little girls grow up dreaming about, but it is a life that can be so rewarding. I believe that the heart of being a law enforcement wife is providing our men with a home that is a safe haven from the stresses and the evils that they face. Hopefully there are some tips, recipes or DIY ideas that you can make your own to help create your version of a safe haven!

Late July Lemon Day!
I've always loved lemon flavored goodies (namely my Grandma's lemon meringue pie!) and yesterday I bought myself a bag of lemons because I was having a major craving!
For dinner tonight, we had Lemon Cream Pasta with chicken (http://allrecipes.com/recipe/lemon-cream-pasta-with-chicken/Detail.aspx), a recipe I discovered on Pinterest last summer, but haven't made it since. Major mistake because it's so yummy!! I didn't follow it exactly though. It's too hot in Virginia in July to cook your chicken in the oven.
Instead, I cubed up the chicken breasts, tossed them in a skillet with a bit of olive oil and sprinkled them with the garlic powder and lemon pepper seasoning, along with one quartered lemon. Cooking the chicken in a skillet cooks it in about half the time and keeps from heating up the house!
To carry on the lemon theme for the day, I went back to Pinterest (obviously) and found this yummy little idea (http://www.keyingredient.com/recipes/575512200/starbucks-lemon-loaf/)...copycat Starbucks Lemon Loaf! This one I did follow exactly as directed. My allergies have been screwy lately, so my smelling is not working properly, but it must have smelled delicious while baking and cooling, because my husband commented about 5 times in an hour about how he couldn't wait to try it!
So now I've used two lemons...four more left in the bag! Wonder what other creations I can come up with over the next few days!
